Sweet Potato Crust Quiche

Ohhh nostalgia! ❤️


I ate this quiche almost every single day for lunch in those first few months as a new mom because (1) the ingredients helped with milk supply and energy levels, (2) it was quick to heat up with a baby attached to me, and (3) it was d@mn delicious! 😍

In those early postpartum days, I would make a quiche on Sunday and eat one slice each day with a side salad and piece of fruit!

I recently made one of these beauties and realized that I never shared the recipe with you gals!

The crust is made of sweet potatoes and the inside contains eggs, spinach, garlic, onions, mushrooms, tomatoes, mozzarella cheese, and a little olive oil!

✨Benefits of these ingredients:✨

🍠 Sweet potato: major source of potassium which helps to balance electrolytes; rich in vitamin C, beta carotene, magnesium and iron – all of which are essential energy nutrients (aka- fights fatigue!)

🍳 Eggs: rich in protein, choline, lutein, vitamins B12 and D, riboflavin and folate; also helps with energy levels

🌱 Spinach: contains iron, calcium and folic acid; high levels of magnesium play a vital role in producing energy at a cellular level

⚪️ Garlic: has chemical compounds which help in lactation

🍄 Mushrooms: rich in iron which helps to fight fatigue and lethargy; assists the production and movement of oxygen throughout the body

🔸 Olive Oil: assists in absorption of vitamins and minerals present in other foods eaten; aids in easy bowel movement

Sweet Potato Crust Quiche


  • 2 medium sweet potatoes
  • 2 tsp olive oil
  • 1 small onion, chopped
  • 16 ounces sliced baby bella mushrooms
  • 1 cup cherry tomatoes, halved
  • 16 oz fresh baby spinach leaves
  • 2 cloves of garlic, minced
  • 4 large eggs
  • 1 c shredded mozzarella
  • salt and pepper


  1. Heat the oven to 400.
  2. Peel the sweet potatoes, and using a food processor's slicing disc or a mandolin, slice as thinly as possible.
  3. In a glass pie dish, lay the sweet potatoes out in a circular pattern. Overlap the pieces so when it bakes and they shrink a little, they are still overlapping.
  4. Bake the sweet potato "crust" for 15 minutes at 400.
  5. After 15 minutes, remove the pan from the oven and lower the heat to 375.
  6. While the potatoes are baking, prepare the filling.
  7. Heat olive oil in a large sauté pan over medium-high heat. When the oil is warm, add the onion, and cook until soft and translucent. Add the mushrooms and sauté until the moisture has cooked out of the vegetables.
  8. Add the garlic, spinach, and tomatoes. Gently stir until warmed and wilted (don't overmix and mash the tomato halves). Cook for 2 minutes. Then remove from heat.
  9. In a large bowl, whisk the eggs. Add the mozzarella cheese, salt, and pepper. Fold in the veggie mix and stir to distribute the eggs throughout.
  10. Pour the mix into the sweet potato crust and smooth it out to ensure it is evenly distributed.
  11. Bake for 30 minutes or until the eggs are set.

Monday Mornings Look A LOT Different Now

Monday mornings look a LOT different now (as in they don't freaking suck anymore) because I decided to make a CHANGE and STOP living meekly.

But like ALL humans, I was filled with FEAR when I started this lifestyle coaching gig.

I talked myself out of starting a dozen times because I had “NO TIME."

I was working full time, going to school full time, writing my dissertation (and then I got pregnant and had zero energy)!

BUT I was MUCH MORE scared of what OTHER people would think of ME than worried about "lack of time" <<<my favorite BS excuse.


I feared….
People would “un-follow me” on social media or think what I was doing was stupid.

People would make jokes about my coaching business and not take me seriously, when I worked so hard to be “taken seriously” in the world of academia.

People would think I’m going to want to “spam” them.

People I met would think I only wanted to know their story because I was going to “sell them” on something.

And now I realize that...

ALL of those things HAPPENED.
Some people DID think those things.
Some people did "unfollow me."


But in the process.... I helped SO many women LOVE their lives more, find themselves again, fight disease and depression, AND provided my family with opportunities that would have NEVER even been THOUGHTS without this gig (like twinning with my bestie on a Monday morning)…

So was it "worth it?".... umm.... hell freaking YEAH!

People are ALWAYS going to have something to say, so why in the WORLD don't you just do what YOU want?

Criticism can be avoided by saying nothing, doing nothing, and being nothing. But who wants to live life that way?? I sure as hell don't!

Flourless Zucchini Brownies

Brownies aren't so bad when there's vegetables in them, right?!

I made Sweet Potato Brownies a few weeks ago and they were such a hit, I decided to reuse that recipe base but incorporate zucchini instead of sweet potato! 

And oh my word, another WIN! 

I used 1 less egg in this recipe because the zucchini has more moisture than the sweet potato...and they turned out divine!

These bad boys are super moist and filled with fiber, so they are healthy and hearty all at once! 

I stored them in an airtight container in the fridge (but they didn't last very long...we ate them up pretty quickly)! 

I hope you love them as much as we did!

Flourless Zucchini Brownies


  • 2 eggs
  • ¼ cup maple syrup
  • ½ cup melted coconut oil + extra for greasing
  • ¾ cup almond meal
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 1 small zucchini
  • 1/4 cup chocolate chips for topping


  1. Preheat the oven to 350°F. Line an 8x8 inch baking pan with parchment paper and grease with a tiny bit of coconut oil.
  2. Grate the zucchini and place it into a colander lined with paper towel or a kitchen towel. Squeeze out excess liquid.
  3. Using an electric hand mixer or stand mixer, whisk together the eggs, syrup, and coconut oil until well combined.
  4. In a separate bowl, combine almond meal, cocoa powder, baking powder, and salt.
  5. Slowly add the dry ingredients into the wet.
  6. Add the zucchini and mix until well combined.
  7. Pour brownie batter into baking pan and bake for 22-30 minutes, or until an inserted toothpick comes out clean. (I have a super hot oven that cooked them in 22 minutes!)
  8. Remove from oven, let cool for a few minutes, top with chocolate chips, then let the masterpiece cool completely before cutting!
  9. Try not to eat the entire pan at once!

21 Day Fix: Cardio Fix Preview - UK Version

I love celebrating FIRSTS! Anyone else? First time in a new church, first time in a new country, first time London said “f&ck” 🙊(which was yesterday morning. I was trying to pack all our $hit and she repeated it after me 😳)! I guess it’s time to clean up my vocabulary! 🙈

What was your child’s first swear word?! And how old were they?!

Anyway, this was my FIRST workout in Scotland, so I’m celebrating it! 🙌🏼🎉

Even while traveling, I make it a point to do my workout…even though I’ve been walking like 7 miles a day EVERY day and my feet are killing me! 😭 Walking just doesn’t tone the rest of my body like these workouts do! Plus they help to loosen and stretch my back and neck, which have been SO tight from traveling and carrying stuff!

And since they don’t require any equipment (besides wifi to stream them), I don’t really have an excuse!

So here are some moves you can do today- because you can do them anywhere, anytime! Do each one for 1 minute then repeat from the start!

- plank hold
- skater jumps
- mountain climbers
- reverse lunges
- burpees
- squat walks
- oblique crunches

I seriously can't believe this is my body!

I'm so sad and angry that I lived the majority of my life yo-yo dieting, depriving, bingeing, hiding, and quitting. Saying "I'll start on Monday" or "I'll start after the holidays." Then quitting after 3 days because I went to the extreme and it wasn't sustainable!

👉🏼What was the craziest "weight loss" thing you ever did?! For me: cabbage soup diet, Atkins diet, some crazy canned tuna diet 🙊😖😳 and much more! 🙈

I WISH I could go back and reclaim those years because now that I know what THIS feels like, I realize that I missed out on SO much joy.

If only someone would've helped me back then...shown me THIS way of life, I would've enjoyed those days & years so much more.
