Zucchini Noodles: Zoodles!

There are many spiralizers out on the market, but I purchased this nifty three pack of of peelers from Williams-Sonoma.

The julienne peeler does the trick!

Directions:

1. Wash your zucchini. 
2. Cut off both ends.
3. Use the julienne peeler to create noodles!

I usually add the raw noodles to warm sauce or soups; I don't pre-cook or saut√© them. I've found that by cooking them first, they get too mushy. By adding them to warm sauce or broth when they are raw, they are heated and softened to perfection.
