Healthy Funfetti Muffins

 

Hi, my name is Ashly and I’m a 30-something obsessed with anything “funfetti!” Rainbow sprinkles literally are my crack.

These muffins are amazing because they’re actually quite healthy (unlike boxed cake mix)! And they’re mixed in a blender - which means no dirty bowls or hand mixers or stand mixers! 🙌🏼

(Tip: to clean the blender afterwards just add some soapy water and blend!)

I took my classic Banana Oatmeal Blender Muffin recipe and added ground flax to help with milk supply and sprinkles to make them worth eating! 💙💚💜💛🧡

You can add Brewer’s Yeast to this recipe to give your milk supply a bigger boost if you’d like!

Funfetti Lactation Muffins

Ingredients:

  • 2 cups rolled oats
  • 2 ripe bananas
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1 tsp vanilla extract
  • 3 TB brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 TB ground flax
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • Rainbow sprinkles

Directions:

  1. Preheat oven to 350 degrees F.
  2. Add all ingredients except the sprinkles to a blender and puree until smooth.
  3. Add desired amount of sprinkles to the batter and gently mix with a spatula (I don’t like turning on the blender for this part because the sprinkles get too broken up - I take my sprinkles seriously).
  4. Then spoon into a greased mini muffin tin and bake at 350 for 10 minutes.
  5. Enjoy!!!
