Ultimate Reset: Day 9

Day 9: Don't do this while preparing your taxes!

If there was ever a need for wine, it would be tonight! The hubby and I are major procrastinators when it comes to taxes, so we spent the better part of today getting our $hit together and the stress levels were high! A glass of wine would have been glorious!

I also threw a mini temper tantrum when I opened a package we received in the mail and the smell of freshly ground coffee wafted into my nose! I forgot to postpone our coffee shipment and it taunted me. It's still the ONLY thing I want, crave, and miss!

But Sean and I are going strong. No wine, no coffee, no treats, no cheats! I'm sipping on some herbal tea as I write this and feeling really good!

We went for a long walk and played at the park because we feel incredible! The biggest victory I'm noticing is in my tummy. No bloat, no gas, no heartburn, no looking like I'm pregnant after a meal!

Here's what I ate today:

First thing: 24 oz water with Mineralize and Optimize supplements

30 minutes later: Breakfast - Fresh fruit plate (3 cups of fruit!)

2 hours later: Mineralize and Optimize supplements
30 minutes later: Lunch - Microgreen salad with rice and pinto beans (recipe below)

2 hours later: Power Greens powder with water

30 minutes later: Snack - Vegan Chocolate Shakeology + banana + peanut butter

2 hours later: Mineralize, Optimize, Soothe supplements

30 minutes later: Dinner - Sweet potato and roasted red pepper bisque with roasted asparagus and almond slivers
{{YUM! Finally a good dinner! And I get to have this soup again for lunch tomorrow, which I'm super excited about!}}

The pinto beans and rice dish may not sound delish, but it's sneaky and flavorful! Here's the recipe:

Ingredients

½ cup canned pinto beans, with liquid
1 cup cooked brown rice, heated
1 tsp. extra-virgin olive oil
1 tsp. ground smoked paprika
1 dash ground cumin
¼ tsp. ground coriander
1 tsp. Bragg Liquid Aminos
Himalayan salt (to taste; optional)

Directions

Heat beans in medium saucepan over medium heat for 3 to 5 minutes, or until hot. Drain.
Add oil, paprika, cumin, coriander, and Bragg Liquid Aminos, plus salt (if desired); mix well.
Gently fold beans into warm cooked rice.

Thanks for sticking with me! See you tomorrow!
