Asian Beef with Mushrooms and Snow Peas

My hubby and I are huge fans of all Asian cuisine and we're always looking for healthy dishes to enjoy at home!

Here's a great Chinese takeout alternative that's waaay healthier, but just as tasty! Our daughter devoured it too, so it's toddler approved!

Asian Beef with Mushrooms and Snow Peas

Ingredients:

  • 1/4 cup soy sauce
  • 4 tablespoons brown sugar
  • 4 garlic cloves, minced
  • 1/2 teaspoon fresh ginger, grated
  • 2 teaspoons rice vinegar
  • 10 oz snow peas
  • 3 tablespoons olive oil
  • 10 oz sliced mushrooms
  • 1 pound flank steak or skirt steak, thinly sliced
  • 2 cups cooked brown rice
  • chopped green onions for garnish

Directions:

  1. Cook rice according to package. As it cooks, prepare the rest of the meal.
  2. Combine soy sauce, brown sugar, garlic, ginger, and rice vinegar in a bowl - whisk to combine. Set aside.
  3. Heat a large skillet until hot. Add 1 tablespoon of olive oil then add sliced mushrooms (they should sizzle when you add them) - cook on high heat until golden brown. Remove mushrooms to a bowl.
  4. To the same skillet, on high heat, add 1 tablespoon of olive oil, which will sizzle right away. Immediately add the snow peas, cook for 2 minutes, stirring occaisonally. Add 2 tablespoons of water to the pan, cover with a lid, and steam for 3-5 minutes. Drain water, remove snow peas to the bowl with the mushrooms, and set aside.
  5. Add 1 tablespoon of olive oil to the skillet (on high heat) then add half the beef. (Cook the meat in 2 batches because you will want each slice of meat to touch the bottom of the skillet. If the pan is too crowded, the meat will steam and become chewy.) Cook meat on each side until brown. Remove this batch to a bowl. Add a second batch of meat and repeat.
  6. Return all of the cooked meat back to the skillet. Add the snow peas and cooked mushrooms, then the sauce. On high heat - stir everything to combine, for about 1 minute until it thickens slightly. Turn off heat.
  7. Serve over rice and top with green onions!
